5 easy to make vegan meals that won't cost the earth

As a vegan student, you can't really afford to splash the cash on food all year round. However, it doesn't mean you have to live off beans on toast either.

Here are my favourite meals that are affordable, quick and easy to cook:

Vegan korma curry

One of my favourite vegan meals is a korma. To make my vegan korma I use Tesco's chicken style pieces, chickpeas, roasted sweet potato and a jar of free from korma sauce. This is a versatile dish that can be paired with something you already have in the cupboard, such as rice, bread or other vegetables.

Although this seems like a more expensive meal, costing £3.85, I manage to get four servings from this which makes the meal cost only 96p per serving. This is a versatile dish that can be paired with something you already have in the cupboard, such as rice, bread or other vegetables.

Vegan stir fry

Cooking a stir fry is a tasty way to get your daily recommended vegetable servings. I use Tesco's chicken style pieces, a larger bottle of sweet chilli sauce—which has about four servings in—and some stir fry mix.

This makes two servings and takes about 10 minutes total to cook and costs £3.95, making that £1.68 a meal when considering the extra servings of sweet chilli sauce that will be left.

Vegan spaghetti bolognese

As a student, pasta is often a staple that I always keep stocked up in my cupboards—this 3kg bag of pasta will keep you going up for a very long time. A quick and easy way to make this is using Tesco's soya mince paired with this Bolognese sauce. The bag of mince will have four portions in and the jar of sauce serves two. Then I add whatever vegetables I have in the fridge or freezer (my favourites are carrot, pepper and mushroom) and add a dash of nutmeg for a warm and comforting meal.

This will cost £2.40, although it averages out at 76p a meal when considering the mince portions and excluding products such as pasta (you can get a pack of spaghetti for 20p at Tesco) and your vegetables of choice.

Vegan sweet and sour chicken

This is one of the easiest meals to make. I pair Tesco's reduced sugar sweet and sour sauce—although Uncle Ben's sauces are often on offer at Tesco for 90p and the one with extra pineapple is incredible—with a chopped up pepper and Tesco's chicken style pieces and serve over rice. While I wish I could have Chinese takeaway every day, this is a more budget-friendly option.

This adds up to £3.35 although for a singular portion it's £1.23.

Vegan Chilli

This is a quick and easy meal that I often cook in bulk. It's easy to pair with something you already have in the cupboard, such as rice, potatoes or tacos. I use Tesco's soya mince, tinned tomatoes, baked beans and a vegan-friendly chilli con carne mix.

This costs £3.30, although it comes in at just 82p per meal as these ingredients make four servings. This meal is also a great way of getting your protein intake.

Hopefully these ideas can give you some inspiration of what to cook on a student budget. Veganism doesn't have to be expensive and is easily adaptable to some of your favourite, traditionally meat-centred meals.
