5 cheap vegan recipes every student should know
As a student you can live off proper food, other than ramen and baked beans.
Adapting a vegan diet can do just that. A week's shopping can cost as little as £10 depending on which luxuries you go for. More importantly, it's all about meal prep and batch cooking. That alone can change the game of cooking whilst studying. I will list a few of my favourite vegan recipes below for you to check out, they are all quick and easy to do with very little preparation needed. Perfect for us lazy students.
Food staples for a vegan diet
- Rice noodles
- Any vegetables
- Spices/sauces (Chilli, black pepper, turmeric, sweet chilli sauce etc)
- Veggie stock
- Frozen vegetables (they work out cheaper and take less time to cook than fresh ones)
- Leafy Greens (Kale, Spinach)
If you have these in your fridge/cupboard then your well on your way to having the greatest cheap meals. Although these are just the staples I have mentioned, there are so many more amazing plant-based foods you could add to your diet such as Tempeh, Couscous, hummus etc. Plant-based diets are not as restrictive as many people think they are - you can eat a lot more as a vegan and still be healthy. What's not to love about that?
1. Vegan Singapore Noodles
This is one of my favourite go to meals, only taking about 30 minutes to make its super simple but delicious at the same time. A perfect recipe to add to your student recipe book.
2. Squash, Galangal and Coconut Soup
This recipe is a little bit more on the complicated side, taking longer to prepare and cook due to the list of ingredients needed to create this. But honestly it's worth every minute, if you enjoy Thai food then this Thai inspired soup is something you ought to try.
3. Peanut Butter Granola Pancakes
Breakfast can be tough as a student, with a hangover from the night before cooking a breakfast wouldn't be high on the priority list. However, if you prepare in advance you could have a yummy meal - why not try this awesome pancake recipe?
4. Almond Butter Fudge
This is one the easiest recipes I have ever created. Not even kidding, I would make these almost every month and they last ages in the fridge - perfect snack and on-the-go pick me up for in between classes. Getting those healthy fats into your diet and maintaining brain function. Have a go at making them yourself.
5. Tofu Stir-fry
This is my go-to for a super simple, quick meal that’s also healthy and delicious. Plus, at £1.46 per serving (excluding spices), you cannot go wrong! I prep this meal so leftovers can be made into lunches. Give it a go. Tofu isn't as scary as it sounds.
Those were my five cheap and easy vegan/plant-based meals that I believe can make a student's life easier in the kitchen. Give some of them a go and you never know, you could end up going plant-based completely.
